In the 1960s, the Sugar Research Foundation paid $50,000 to 3 Harvard scientists to publish articles blaming fats instead of sugar for heart disease. One of those scientists, D. Mark Hegsted, even became the head of nutrition at the United States Department of Agriculture and drafted the government’s dietary guidelines. The truth is that your body needs healthy fats. Healthy fats help regulate high blood sugar, hypoglycemia (common in adrenal fatigue syndrome) and allow your body to absorb vital nutrients, and increase the absorption of vitamins A, D, E, and K. While tomatoes and carrots contain nutrients such as lycopene and beta-carotene that prevent heart disease and cancer, your body needs fat to absorb those nutrients. In a study in the American Journal of Clinical Nutrition, participants who ate a salad with fat-free dressing had negligible amounts of carotene and lycopene detected in the blood compared with those who consumed more fat. An avocado or some sesame seeds goes a long way in helping absorb more nutrients from the vegetables we eat. Not all fats are created equal. Healthy fats are found in coconut oil, olive, fish, nuts, and avocado. Here is why I recommend starting the day with a smoothie that contains coconut oil. One of the leading causes of fatigue is the mitochondria not having a good energy source like coconut oil. It is like your laptop slowing down to conserve energy when the battery is nearly empty. Other benefits of coconut oil are reducing anxiety, helping overcome low mood and depression, and being an anti-inflammatory for the body and brain. Unhealthy fats are found in french fries, processed foods like cookies, chips, and cakes.
