The truth is that your body needs healthy fats.
Healthy fats help regulate high blood sugar, hypoglycemia (common in adrenal fatigue syndrome) and allow your body to absorb vital nutrients, and increase the absorption of vitamins A, D, E, and K.
While tomatoes and carrots contain nutrients such as lycopene and beta-carotene that prevent heart disease and cancer, your body needs fat to absorb those nutrients.
In a study in the American Journal of Clinical Nutrition, participants who ate a salad with fat-free dressing had negligible amounts of carotene and lycopene detected in the blood compared with those who consumed more fat.
An avocado or some sesame seeds goes a long way in helping absorb more nutrients from the vegetables we eat.
